Summer Sorrel Pesto

This pesto recipe is a summertime favorite of mine. My pesto sauce features the tart, acidic flavor of sorrel, and it takes mere minutes to make. Preparation is simple: you just add all of the ingredients to a food processor and blend them up. This beautiful sauce includes fresh herbs, olive oil, garlic, Pecorino Romano, and walnuts - it's perfect for your favorite pasta, and you can even spread it on bread for a snack that's bursting with flavor.

Ingredients

  • 30 grams (2 cups) sorrel
  • 20 grams (1 ½ cups) basil
  • 30 grams ( 2 heaping tablespoons) walnuts
  • 3 large cloves garlic
  • 20 grams (¼ cup) Pecorino Romano, grated finely
  • 99 grams (½ cup) olive oil
  • Kosher salt & black pepper

Instructions

Step 1

Add all of the sorrel, basil, walnuts, garlic, and Pecorino Romano to a food processor - process until finely minced. With the machine on low, slowly drizzle all of the olive oil into the food processor until smooth and emulsified. Season with salt and pepper. Use as you like! It's wonderful with pasta or on sandwiches.
